You may add a bit of salt if you like to mixture, but basically it is pretty much salt tasted already. I would usually get two loaves out of this mixture. It is excellent toasted.

Well, if you are eliminating the yeast but keeping the flour, it would not work if you were on Atkins. More importantly, refined flour is not the best for the Candidiasis either. Whole grain flour would be better for the Candidiasis and for Atkins if you are able to have the carbs.
